Food of the Month – Peas
Nutrition:
Peas contain vitamins, A, C, K and folate. Peas also contain many minerals and are a good source of plant protein.
Health benefits of green peas include blood sugar control from their low glycemic index, benefit digestion from its higher fiber content, and are heart healthy from the minerals and antioxidants.
To help receive the most nutrients and help with common side effects from green pea consumption, some have found fermenting, sprouting and soaking the peas as well as eating them cooked and in smaller portions can help with gas and bloating.
When purchasing:
- Typically, it is more cost effective to purchase peas while in season during May-July.
- Look for bright green peas with no wilting with tender and plump pods.
- To maintain freshness, refrigerate and keep away from direct sunlight and heat.
How to freeze peas:
- Blanch peas in boiling water for 2-3 minutes and cool in an ice bath.
- Once cooled, place in an airtight container and store in freezer.
- Blanched peas will last in freezer for up to a year and help keep its color and texture while fresh peas that are frozen last closer to 2-3 months.
