Black Bean Soup with Avocado Creme

Black beans are an excellent source of protein, fiber and B vitamins. This smooth plant-based soup is a great way to support lean muscle mass. The avocado creme supplies heart health mono-unsaturated fat, fiber and beneficial calories.
Ingredients
- 3 Tbs olive oil
- 1 large onion, diced
- 1 1/2 tsp salt
- 3 cloves garlic, chopped
- 1/4 cup fresh cilantro, chopped
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp chipotle chili powder
- 2 15 oz cans black beans, drained and rinsed
- 3 cups chicken or vegetable stock
- 1/2 avocado
- 1/4 tsp salt
- 2 limes, juiced
- 1/4 cup water
Directions
- Heat olive oil in large pot over medium heat. Add onion and salt. Sauté for 5 minutes, stirring to prevent browning.
- Add garlic, cilantro and spices. Cook and cover for five minutes.
- Add black beans and stock. Bring to boil, then lower heat and simmer 15 minutes.
- Using an immersion blender, puree soup until very smooth. If skins are an issue, process through a sieve or ricer.
- To make avocado creme, mix all ingredients (from avocado to water) in a bowl until smooth.
- To increase protein, add a dollop of Greek yogurt to bowl.
