Black beans are an excellent source of protein, fiber and B vitamins. This smooth plant-based soup is a great way to support lean muscle mass. The avocado creme supplies heart health mono-unsaturated fat, fiber and beneficial calories.

Ingredients

  • 3 Tbs olive oil
  • 1 large onion, diced
  • 1 1/2 tsp salt
  • 3 cloves garlic, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp chipotle chili powder
  • 2 15 oz cans black beans, drained and rinsed
  • 3 cups chicken or vegetable stock
  • 1/2 avocado
  • 1/4 tsp salt
  • 2 limes, juiced
  • 1/4 cup water

Directions

  1. Heat olive oil in large pot over medium heat. Add onion and salt. Sauté for 5 minutes, stirring to prevent browning.
  2. Add garlic, cilantro and spices. Cook and cover for five minutes.
  3. Add black beans and stock. Bring to boil, then lower heat and simmer 15 minutes.
  4. Using an immersion blender, puree soup until very smooth. If skins are an issue, process through a sieve or ricer.
  5. To make avocado creme, mix all ingredients (from avocado to water) in a bowl until smooth.
  6. To increase protein, add a dollop of Greek yogurt to bowl.
