Roasted Grape Crostata

A simple yet delicious dessert to put on the table this summer when grapes are in the peak of sweetness and flavor. Served with vanilla ice cream, frozen yogurt, or fresh whipped cream.
Ingredients
- 1 package prepacked pie dough
- 2 cups red grapes, or a mixture of red and green
- 1 egg, beaten for brushing
- 1-2 Tbsp granulated sugar
Directions
- Preheat oven to 425. Lightly spray a baking sheet.
- De-stem the grapes and set aside.
- Place the pie dough on a cutting board and using a rolling pin, roll out lightly. Transfer to the baking sheet.
- Mound the grapes into the middle of the dough, leaving a 2” border all the way around. Fold a small portion of the dough toward the center where the grapes are. The dough will not cover the grapes but rather just partially cover the edge of the grapes. Repeat, continuing overlapping the dough and pleating the overlapping edges. You should have an open-faced pie with about 4: of exposed grapes in the center.
- Brush the dough with the beaten egg and sprinkle the sugar over the grapes.
- Bake for 30-40 minutes. Check at 20 minutes if the crust is getting too dark, cover the dough loosely with some aluminum foil.
- The crostata is done when the grapes are just bursting open and crust is dark brown with a some lightly burnt edges where the dough has been folded over on itself.
- Cool for a few minutes before cutting into 6 or 8 wedges. Serve with either the ice cream, frozen yogurt or fresh whipped cream.
