- Look for sweet potatoes with smooth and even skin
- Avoid any large in size as they can be fibrous
- Avoid any with sprouts as it can alter its taste
- Store in cool, dark place
- Avoid refrigeration as it alters the flavor and taste

- Boil: Boiling makes creamy texture which is great for mashing.
- Candy: Great for a side dish or a treat!

Sweet potatoes are ranked number seven in the world food production, with Asia producing 80%. The Japanese sweet potato is a staple in Okinawa, one of the Blue Zones of the world. The purple sweet potatoes are lower on the glycemic index compared to regular sweet potatoes and provide higher amounts of anthocyanins which give them their purple color and antioxidant properties.
