Sage and strawberries are great garden companions, so why not feature them together in this bright and fresh summer salad?

Ingredients

  • 1 pint strawberries, washed, hulled and sliced
  • 1 Tbsp pineapple sage, chiffonade (very thin ribbon slices)
  • 2 cups mixed greens of your choice
  • 1 small shallot, very thinly sliced
  • 2 oz feta, shaved or crumbled
  • 2 Tbsp white balsamic vinegar
  • 2 Tbsp extra virgin olive oil
  • Flake salt & freshly cracked pepper

Directions

  1. In a small bowl, toss sliced berries with vinegar to coat well. Add sage.
  2. On your favorite plate or platter, place washed and dried greens. I grabbed purple romaine, purple baby bok choy sprouts, curly endive and parsley from my garden. Add shallots.
  3. Place strawberries on top of greens and add shaved feta cheese. Drizzle with olive oil and salt & pepper to taste. Garnish with fresh sage blossoms, if available.
