Strawberry Salad
About
Sage and strawberries are great garden companions, so why not feature them together in this bright and fresh summer salad?
Ingredients
- 1 pint strawberries, washed, hulled and sliced
- 1 Tbsp pineapple sage, chiffonade (very thin ribbon slices)
- 2 cups mixed greens of your choice
- 1 small shallot, very thinly sliced
- 2 oz feta, shaved or crumbled
- 2 Tbsp white balsamic vinegar
- 2 Tbsp extra virgin olive oil
- Flake salt & freshly cracked pepper
Directions
- In a small bowl, toss sliced berries with vinegar to coat well. Add sage.
- On your favorite plate or platter, place washed and dried greens. I grabbed purple romaine, purple baby bok choy sprouts, curly endive and parsley from my garden. Add shallots.
- Place strawberries on top of greens and add shaved feta cheese. Drizzle with olive oil and salt & pepper to taste. Garnish with fresh sage blossoms, if available.
