Spanish Sofrito
About
Sofrito is a traditional cooking sauce found in Spanish and Latin American cuisine. Incorporate it into beans, scrambled eggs, or any type of meat or chicken prior to cooking for added flavor.
Ingredients
- 3 Tbs olive oil
- 2 medium yellow onions, finely diced
- 1 large green pepper, finely diced
- 4 medium sized tomatoes
- 2 tsp smoked paprika (preferably Spanish)
- 3 cloves garlic, minced
Directions
- To prepare the tomatoes, core, cut in half and squeeze out juice and excess seeds. Dice finely and reserve.
- Heat a large skillet over medium heat with the olive oil. Once hot, add the diced onions and cook while stirring, until soft but not browned.
- Add the diced green pepper and garlic, continue cooking while stirring until soft.
- Add the diced fresh tomatoes and the paprika; lower heat and cook until a stew like consistency.
- Cool. Place in smaller containers. Use within one week or place in freezer for longer storage.
