If you crave something sweet in the morning but don't want to endure a sugar crash later in the day, give this carrot cake oatmeal a try! Full of fiber and flavor, this dish is sure to satisfy your sweet tooth and goes great with a morning cup of coffee.
Ingredients
- 1 cup oatmeal
- 1/2 cup grated carrots
- 1/4 cup raisins
- 1 cup water
- 1 cup milk of choice
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp nutmeg
- 1/2 tsp vanilla
- 1/4 tsp salt
- 1/2 tsp orange zest (optional)
- banana (optional)
- chopped pecans (optional)
Directions
- Bring water and milk to a simmer in a saucepan.
- Add the rest of the ingredients and cook for about 10 minutes or until the oatmeal has absorbed all the liquid.
- Top with bananas and any other desired toppings. Enjoy!
