If you crave something sweet in the morning but don't want to endure a sugar crash later in the day, give this carrot cake oatmeal a try! Full of fiber and flavor, this dish is sure to satisfy your sweet tooth and goes great with a morning cup of coffee.


  • 1 cup oatmeal
  • 1/2 cup grated carrots
  • 1/4 cup raisins
  • 1 cup water
  • 1 cup milk of choice
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1/2 tsp orange zest (optional)
  • banana (optional)
  • chopped pecans (optional)


  1. Bring water and milk to a simmer in a saucepan.
  2. Add the rest of the ingredients and cook for about 10 minutes or until the oatmeal has absorbed all the liquid.
  3. Top with bananas and any other desired toppings. Enjoy!
