Sofrito is a traditional cooking sauce found in Spanish and Latin American cuisine. Incorporate it into beans, scrambled eggs, or any type of meat or chicken prior to cooking for added flavor.

Ingredients

  • 3 Tbs olive oil
  • 2 medium yellow onions, finely diced
  • 1 large green pepper, finely diced
  • 4 medium sized tomatoes
  • 2 tsp smoked paprika (preferably Spanish)
  • 3 cloves garlic, minced

Directions

  1. To prepare the tomatoes, core, cut in half and squeeze out juice and excess seeds. Dice finely and reserve.
  2. Heat a large skillet over medium heat with the olive oil. Once hot, add the diced onions and cook while stirring, until soft but not browned.
  3. Add the diced green pepper and garlic, continue cooking while stirring until soft.
  4. Add the diced fresh tomatoes and the paprika; lower heat and cook until a stew like consistency.
  5. Cool. Place in smaller containers. Use within one week or place in freezer for longer storage.
